Pizza is an oven-baked, flat, disc-shaped bread commonly covered with tomato sauce and mozzarella cheese and a diversity of meats, salamis, seafood, cheeses, vegetables and herbs, which depends upon one's taste and culture. Pizza has existed since antiquity in different kinds and garnished with olives, nuts, raisin, honey or herbs. In Italian, the word pizza denotes any kind of flat bread or pie - either fried or baked. Although there are a great many types of pizza around the Mediterranean, it is Naples that witnessed the appearance of pizza first, after the tomato became a favourite ingredient in the XVIII century. The first records of pizza appeared around the XI century. Pizzas were cooked on the open fire and at times were folded as a book to form a calzone. Naples was the first city where pizzerias appeared. They were equipped with brick ovens that were heated with stones from Mountain Vesuvius. The chefs of those times ignored pizza as a dish, since it was primarily cooked by poor people. However, when pizzas covered with tomato appeared at the end of the XVIII century, pizza gained popularity even among Italian royalties. The popularity of pizza was vividly depicted in the Neapolitan folklore. Simple to bake and economical, it became a favourite dish of all people. A famous episode extended the popularity of pizza over the borders of Naples. Italian Queen Margherita paid a visit to the city in 1889. She was told about pizza and wished to taste it. Famous cook Don Raffaele assisted by his wife was invited to cook pizza in the royal palace. They cooked 3 pizzas characteristic of that time: one with basil and cheese; one with garlic, oil and tomato; and one with basil, mozzarella and tomato. The queen impressed by the colours of the third pizza which resembled the national flag preferred it to the other two. This kind of pizza was called Pizza Margherita. At the beginning of the XX century, pizzerias were opened in the USA because of a great number of Italian immigrants, and became very popular. However, even nowadays the tastiest pizza is cooked in Naples.
